Ingredients
  

  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 cup brown sugar
  • 1 cup pumpkin puree
  • 1 cup vegetable oil
  • 4 large eggs
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • 2 tsp ground cinnamon
  • ½ tsp nutmeg
  • ½ tsp cloves
  • ½ tsp salt

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Grease a 9x13-inch baking pan.
  • In a bowl, whisk flour, baking soda, baking powder, salt, and spices.
  • In another bowl, combine pumpkin puree, oil, eggs, sugars, and vanilla.
  • Gradually add dry ingredients into the wet mixture and mix until smooth.
  • Pour batter into the prepared pan.
  • Bake for 30–35 minutes or until a toothpick comes out clean.
  • Cool completely before frosting or serving.

Notes

  • Use canned pumpkin puree, not pie filling.
  • Do not overmix the batter to keep the cake tender.
  • Add chocolate chips or nuts for extra texture.
  • Use parchment paper for easy removal.
  • Top with cream cheese frosting for a classic finish.
