Ingredients

  • 1 tablespoon olive oil
  • 1 small yellow onion, finely chopped
  • 3 garlic cloves, minced
  • 1 cup pumpkin puree, unsweetened
  • 2 chipotle peppers in adobo sauce, finely chopped
  • 1 tablespoon adobo sauce from the can
  • ¾ cup vegetable broth
  • ½ cup heavy cream or half-and-half
  • ½ cup grated Parmesan cheese, optional
  • 1 teaspoon fresh lime juice
  • ½ teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • ¼ teaspoon dried oregano
  • ¼ teaspoon black pepper
  • ½ teaspoon salt, or to taste

Instructions

  • Finely chop the onion and garlic. Remove the chipotle peppers from the can and mince them, reserving some adobo sauce for additional flavor.
Measure the pumpkin puree, vegetable broth, cream, and seasonings. Having everything ready before cooking helps the sauce come together quickly.
  • Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and cook for 4–5 minutes, stirring occasionally, until soft and translucent.
Add the minced garlic and cook for another 30–45 seconds until fragrant. Avoid browning the garlic too much, as it can develop a bitter taste
  • Stir in the chopped chipotle peppers and adobo sauce. Add the cumin, smoked paprika, oregano, black pepper, and optional chili flakes.
Cook for approximately one minute, stirring continuously. This brief cooking step helps distribute the smoky, spicy flavors throughout the onion mixture.
  • Add the pumpkin puree to the saucepan and stir until it is evenly combined with the chipotle mixture.
Cook for 2–3 minutes, allowing the pumpkin to absorb the flavors of the spices. The sauce will become thick and take on a rich orange color.
  • Gradually stir in the vegetable broth. Mix thoroughly to remove any thick pockets of pumpkin puree.
Bring the mixture to a gentle simmer, then reduce the heat to low. Cook for approximately 5–7 minutes, stirring occasionally, until the flavors blend together and the sauce reaches a smooth consistency.
  • Reduce the heat and slowly stir in the heavy cream or half-and-half. Continue heating gently for 2–3 minutes without allowing the sauce to boil vigorously.
For a dairy-free version, use unsweetened coconut milk or a suitable plant-based cooking cream. Coconut milk adds a subtle flavor of its own, so choose it if you enjoy that combination.
  • For an extra-silky sauce, use an immersion blender to blend the mixture directly in the saucepan. Alternatively, carefully transfer it to a blender, following the blender manufacturer's instructions for hot liquids.
Blend until smooth, then return the sauce to the saucepan if necessary. If you prefer a more rustic texture, you can skip this step.
  • Stir in the Parmesan cheese, if using, until melted. Add the lime juice and taste the sauce.
Adjust the salt, pepper, and chipotle according to your preference. If the sauce is too spicy, add a little more cream or pumpkin puree. If it is too thick, gradually stir in extra vegetable broth.
  • Cook your favorite pasta in salted water according to the package instructions. Reserve approximately ¼ cup of pasta water before draining.
Add the cooked pasta to the sauce and toss until evenly coated. If needed, add a splash of pasta water to loosen the sauce and help it cling to the pasta.
  • Transfer the pasta to serving bowls. Finish with fresh cilantro or parsley, grated Parmesan, toasted pumpkin seeds, and freshly ground black pepper.
Serve immediately while the sauce is warm and creamy. Add a lime wedge on the side for anyone who wants an extra burst of freshness.

Notes

  • Choose plain pumpkin puree: Unsweetened pumpkin puree works best for savory sauces and gives the recipe its smooth texture.
  • Start with less chipotle: One pepper is enough for a milder sauce. Add more gradually if you prefer a stronger smoky kick.
  • Adjust the consistency: Pumpkin naturally thickens the sauce. Use vegetable broth or reserved pasta water to thin it as needed.
  • Blend carefully: Blending creates a smooth, restaurant-style texture, but the sauce is also delicious when left slightly chunky.
  • Use freshly grated Parmesan: Freshly grated cheese melts more smoothly and provides a more pronounced savory flavor.
  • Choose the right pasta: Penne, rigatoni, fusilli, and fettuccine all work well because they hold the sauce effectively.
  • Keep the heat low after adding cream: Gentle heating helps maintain a smooth sauce and reduces the chance of separation.
  • Store leftovers properly: Refrigerate the sauce in an airtight container within two hours of cooking and use it within 3–4 days.
