Ingredients

  • 1½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • ¾ cup granulated sugar or light brown sugar
  • ½ cup vegetable oil or melted butter
  • 2 large eggs
  • 1 cup pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

Preheat the Oven

  • Preheat your oven to 350°F (175°C). Line a standard 12-cup muffin pan with paper liners or lightly grease each cup with oil or butter.

Combine the Dry Ingredients

  • In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Mix well so the leavening agents and spices are evenly distributed.

Mix the Wet Ingredients

  • In a separate bowl, combine the sugar, vegetable oil, eggs, pumpkin puree, and vanilla extract. Whisk until the mixture is smooth and evenly blended.

Combine the Wet and Dry Mixtures

  • Gradually add the dry ingredients to the wet mixture. Stir gently with a spatula until the flour is just incorporated. Avoid overmixing because it can make the muffins dense or tough.

Add the Chocolate Chips

  • Fold the chocolate chips into the batter, reserving a small handful to sprinkle over the tops. This gives the muffins an attractive appearance and extra chocolate flavor.

Fill the Muffin Cups

  • Divide the batter evenly among the 12 prepared muffin cups, filling each approximately three-quarters full. Sprinkle the reserved chocolate chips over the tops.

Cool and Serve

  • Allow the muffins to cool in the pan for about 5 minutes. Transfer them to a wire rack to cool further. Enjoy them warm when the chocolate chips are soft, or serve them at room temperature with coffee, tea, or milk.

Notes

  • Pumpkin puree: Use plain pumpkin puree rather than pumpkin pie filling, which already contains sugar and spices.
  • Flour measurement: Measure flour accurately using a kitchen scale or spoon-and-level method.
  • Chocolate choice: Semi-sweet chocolate chips offer a balanced sweetness, but dark or milk chocolate also works.
  • Mixing: Stir the batter only until the ingredients are combined.
  • Sweetness: You can slightly adjust the sugar according to your taste.
  • Baking time: Oven temperatures vary, so start checking the muffins after 18 minutes.
  • Storage: Keep completely cooled muffins in an airtight container.
  • Freezing: Freeze individually wrapped muffins for up to 3 months for convenient future snacks.
