Ingredients

For the truffle filling

  • ½ cup pumpkin puree
  • 4 oz (113 g) cream cheese, softened
  • 2 cups (340 g) semisweet chocolate chips
  • ½ cup (60 g) powdered sugar
  • ½ teaspoon vanilla extract
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • ¼ teaspoon ground ginger
  • A pinch of salt

For the coating

  • ½ cup unsweetened cocoa powder, as needed
  • ½ cup melted chocolate for drizzling, optional
  • Chocolate sprinkles or seasonal decorations, optional

Instructions

  • Place the pumpkin puree in a small saucepan over low heat. Cook for 5–10 minutes, stirring frequently, until some of the excess moisture evaporates and the puree becomes thick. Transfer it to a bowl and let it cool completely.
  • Place the semisweet chocolate chips in a microwave-safe bowl. Microwave in 20-second intervals, stirring between each interval until the chocolate is smooth. Alternatively, melt the chocolate in a heatproof bowl over a saucepan of gently simmering water.
Allow the chocolate to cool slightly before mixing it with the other ingredients.
  • In a medium bowl, beat the softened cream cheese until smooth. Add the cooled pumpkin puree, powdered sugar, vanilla extract, cinnamon, nutmeg, ginger, and salt. Mix until the ingredients are evenly combined.
  • Pour the melted chocolate into the pumpkin mixture. Stir thoroughly until the mixture becomes smooth and evenly colored. Taste a small amount and adjust the spice level if desired.
  • Cover the bowl and refrigerate for approximately 1–2 hours, or until the mixture is firm enough to handle. If it remains too soft, chill it longer before shaping.
  • Line a baking sheet with parchment paper. Scoop out approximately 1 tablespoon of the chilled mixture for each truffle. Roll each portion between your palms to form a small ball.
If the mixture becomes sticky, return it to the refrigerator for a few minutes before continuing.
  • Place the cocoa powder in a shallow bowl and roll each truffle until evenly coated. For a different finish, dip the chilled truffles in melted chocolate and allow the excess to drip away.
You can also decorate them with a chocolate drizzle or festive autumn sprinkles.
  • Arrange the finished truffles on the lined baking sheet and refrigerate for another 20–30 minutes to help them set. Serve chilled for the best texture and flavor.

Notes

  • Use thick pumpkin puree: Removing excess moisture helps the truffles hold their shape.
  • Cool the pumpkin completely: Warm puree can affect the chocolate mixture's consistency.
  • Choose good-quality chocolate: Semisweet chocolate provides a balanced sweetness.
  • Soften the cream cheese: Room-temperature cream cheese is easier to mix smoothly.
  • Chill thoroughly: Firm filling is much easier to roll and coat.
  • Adjust the sweetness: Use chocolate with a higher cocoa percentage for a less-sweet finish.
  • Choose your coating: Cocoa powder creates a classic truffle appearance, while melted chocolate produces a firmer shell.
  • Keep refrigerated: Because this recipe contains cream cheese and pumpkin, store the truffles in an airtight container in the refrigerator.
