Ingredients

For the Crepes

  • 1 cup all-purpose flour
  • 2 large eggs
  • 1¼ cups milk
  • 2 tablespoons melted butter, plus extra for the pan
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper

For the Pumpkin Filling

  • 2 cups pumpkin purée, preferably homemade and well drained
  • 1 tablespoon butter
  • 2 cloves garlic, finely minced
  • ¼ cup grated Parmesan cheese
  • ¼ teaspoon ground nutmeg
  • ½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves
  • Salt and black pepper, to taste

For the Fontina Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1½ cups milk, preferably warmed
  • 1 cup grated Fontina cheese
  • ¼ cup grated Parmesan cheese
  • A pinch of ground nutmeg
  • Salt and black pepper, to taste

Instructions

  • In a large mixing bowl, whisk together the flour and salt. Add the eggs and gradually pour in the milk while whisking until the mixture becomes smooth.
Stir in the melted butter and black pepper. The batter should be thin enough to spread easily across a frying pan. If it appears too thick, add a tablespoon of milk at a time.
Let the batter rest for 15–20 minutes. Resting helps the flour hydrate and makes the crepes more tender.
  • Heat a nonstick skillet over medium heat and lightly grease it with butter.
Pour approximately ¼ cup of batter into the pan, tilting and rotating the skillet to spread it into a thin, even layer.
Cook for 1–2 minutes, until the edges begin to lift and the underside turns lightly golden. Flip carefully and cook the other side for another 30–60 seconds.
Transfer the cooked crepe to a plate and repeat with the remaining batter. Stack the crepes with parchment paper between them if needed to prevent sticking.
  • Melt one tablespoon of butter in a saucepan over medium-low heat. Add the minced garlic and cook for about 30 seconds, stirring until fragrant.
Add the pumpkin purée, Parmesan cheese, nutmeg, and thyme. Stir until everything is thoroughly combined.
Cook for 4–6 minutes, stirring frequently, until the filling is warm and thick enough to spread without running out of the crepes. Season with salt and black pepper.
If the pumpkin purée is watery, cook it for a few extra minutes to remove excess moisture. Set aside.
  • Melt two tablespoons of butter in a saucepan over medium-low heat. Add the flour and whisk continuously for approximately one minute to form a smooth roux.
Gradually pour in the warm milk, whisking constantly to prevent lumps. Continue cooking for 3–5 minutes until the sauce thickens enough to coat the back of a spoon.
Reduce the heat to low and add the grated Fontina and Parmesan cheese in small handfuls, stirring until melted and smooth.
Season with a pinch of nutmeg, salt, and black pepper. If the sauce becomes too thick, add a little warm milk until it reaches a pourable consistency. Avoid boiling the sauce after adding the cheese, as excessive heat can make it grainy.
  • Lay each crepe flat on a clean surface or plate. Spoon approximately 2–3 tablespoons of pumpkin filling into the center.
Fold each crepe into quarters or roll it into a neat cylinder. Repeat with the remaining crepes and filling.
Arrange the filled crepes in a lightly buttered baking dish if you prefer to finish them in the oven.
  • Preheat the oven to 180°C (350°F) if you are using the baking method.
Pour some Fontina cheese sauce over the filled crepes, reserving a little for serving. Bake for 8–10 minutes, just until everything is heated through.
Alternatively, arrange the filled crepes on warm plates and spoon the hot sauce over them immediately before serving.
  • Finish with freshly grated Parmesan, chopped parsley, or crispy sage leaves. Toasted pumpkin seeds can add a pleasant crunch.
Serve immediately while the crepes are tender and the Fontina sauce is warm, creamy, and smooth.

Notes

  • Use thick pumpkin purée: Excess moisture can make the filling watery and cause the crepes to tear.
  • Rest the batter: Allowing the batter to rest helps produce softer, more flexible crepes.
  • Grate the cheese yourself: Freshly grated Fontina usually melts more smoothly than pre-shredded cheese.
  • Keep the heat moderate: Medium or medium-low heat helps prevent the crepes from becoming too dark or brittle.
  • Avoid overheating the sauce: Gentle heat keeps the cheese sauce smooth and creamy.
  • Season gradually: Fontina and Parmesan already contain salt, so taste the sauce before adding more.
  • Prepare components separately: The crepes, filling, and sauce can be prepared in advance for easier assembly.
  • Serve immediately: The dish is at its best when the crepes are warm and the sauce is freshly made.
