Ingredients

  • 1 kg pumpkin, peeled, deseeded, and cut into cubes
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 medium onion, chopped
  • 3 garlic cloves, minced
  • 4 cups vegetable broth or chicken broth
  • ½ cup heavy cream or cooking cream
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ¼ teaspoon ground nutmeg, optional
  • Fresh parsley or thyme
  • 2 tablespoons toasted pumpkin seeds
  • A drizzle of cream
  • Freshly ground black pepper
  • A little olive oil

Instructions

  • Wash the pumpkin thoroughly and cut it into manageable pieces. Remove the seeds, peel the skin, and cut the flesh into evenly sized cubes.
Using similarly sized pieces helps the pumpkin cook evenly. Set the prepared pumpkin aside while you prepare the other ingredients.
  • Heat the olive oil and butter in a large saucepan over medium heat. Add the chopped onion and cook for 3–4 minutes until soft and translucent.
Add the minced garlic and cook for another 30–60 seconds until fragrant. Stir frequently to prevent the garlic from burning.
  • Add the pumpkin cubes to the saucepan and stir well to coat them with the onion and garlic mixture.
Cook for approximately 2–3 minutes. This brief sauté helps develop the flavor before the broth is added.
  • Pour in the vegetable or chicken broth, ensuring that most of the pumpkin pieces are covered. Add the salt, black pepper, and optional nutmeg.
Bring the mixture to a gentle boil, then reduce the heat to low. Cover partially and simmer for 15–20 minutes, or until the pumpkin is completely tender when pierced with a fork.
  • Remove the saucepan from the heat and allow the soup to cool slightly.
Use an immersion blender to blend the mixture until it becomes smooth and creamy. If using a countertop blender, blend in small batches and follow the manufacturer's instructions for hot liquids.
If the soup is too thick, add a little warm broth until it reaches your desired consistency.
  • Return the blended soup to low heat. Stir in the cream and allow it to warm gently for 2–3 minutes.
Avoid bringing the soup to a vigorous boil after adding the cream. Taste and adjust the seasoning with additional salt, pepper, or nutmeg if needed.
For a dairy-free version, replace the cream with coconut milk or a suitable unsweetened plant-based alternative.
  • While the soup warms, toast the pumpkin seeds in a dry skillet over medium-low heat for a few minutes, stirring frequently until lightly golden.
Chop the fresh parsley or thyme and prepare any additional toppings you plan to use.
  • Ladle the hot pumpkin soup into bowls. Add a swirl of cream, sprinkle with toasted pumpkin seeds, and finish with fresh herbs and black pepper.
Serve immediately with crusty bread, garlic toast, or crunchy croutons for a delicious homemade meal.

Notes

  • Choose flavorful pumpkin: Sugar pumpkin, kabocha squash, or other sweet-fleshed varieties work particularly well
  • Cut evenly: Uniform pumpkin cubes help everything cook at the same rate.
  • Use good-quality broth: Vegetable or chicken broth adds depth and enhances the natural pumpkin flavor.
  • Blend carefully: Let the soup cool slightly before transferring hot liquid to a countertop blender.
  • Adjust the consistency: Add more broth for thinner soup or simmer uncovered to reduce excess liquid.
  • Season gradually: Taste the soup after blending and adding cream before adjusting the salt.
  • Keep the heat gentle: Avoid vigorous boiling after adding dairy cream.
  • Store leftovers safely: Refrigerate the soup in an airtight container within two hours of cooking and consume within 3–4 days.
