- 1 1/2 lbs boneless, skinless chicken thighs
- 3 tbsp olive oil
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp orange juice
- 3 garlic cloves, minced
- 1 tsp chili powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp oregano
- 1/4 tsp cayenne pepper (optional, for heat)
- 1/2 tsp salt
- 1/4 tsp black pepper
In a large bowl, whisk together the olive oil, lime juice, orange juice, garlic, chili powder, smoked paprika, cumin, oregano, cayenne pepper (if using), salt, and black pepper.
Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours or up to 24 hours for maximum flavor.
Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
Remove the chicken from the marinade and discard any excess.
Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.
Let the chicken rest for 5 minutes before slicing or chopping for serving.
