Ingredients
  

  • 1 1/2 lbs boneless, skinless chicken thighs
  • 3 tbsp olive oil
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tbsp orange juice
  • 3 garlic cloves, minced
  • 1 tsp chili powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp oregano
  • 1/4 tsp cayenne pepper (optional, for heat)
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • In a large bowl, whisk together the olive oil, lime juice, orange juice, garlic, chili powder, smoked paprika, cumin, oregano, cayenne pepper (if using), salt, and black pepper.
  • Add the chicken thighs to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 2 hours or up to 24 hours for maximum flavor.
  • Preheat a grill or grill pan over medium-high heat. Lightly oil the grates to prevent sticking.
  • Remove the chicken from the marinade and discard any excess.
  • Grill the chicken for 6-8 minutes per side, or until the internal temperature reaches 165°F (74°C) and the chicken is nicely charred.
  • Let the chicken rest for 5 minutes before slicing or chopping for serving.

Notes

  • For a stovetop option, cook the chicken in a hot cast-iron skillet or grill pan.
  • Marinating for longer enhances the flavor but is not mandatory for a delicious result.
