- 2 cups shredded Monterey Jack cheese
- 1 cup shredded cheddar cheese
- 8 oz chorizo, casing removed
- 1 small onion, finely chopped
- 1 jalapeño, diced (optional)
- 2 cloves garlic, minced
- 1 tbsp olive oil
- Fresh cilantro, chopped (for garnish)
- Tortilla chips or warm tortillas (for serving)
Preheat your oven to 375°F (190°C).
Heat a cast-iron skillet over medium heat and add the olive oil.
Cook the chorizo, breaking it apart with a spoon, until browned (about 5-7 minutes).
Add the chopped onion, jalapeño, and garlic. Sauté until the vegetables are soft (about 3 minutes).
Remove from heat and drain any excess grease.
Sprinkle the shredded Monterey Jack and cheddar cheese evenly over the chorizo mixture.
Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly (about 10 minutes).
Remove from the oven and let cool slightly before serving.
Garnish with fresh cilantro and serve hot with tortilla chips or warm tortillas.
