Ingredients
  

  • 2 cups shredded Monterey Jack cheese
  • 1 cup shredded cheddar cheese
  • 8 oz chorizo, casing removed
  • 1 small onion, finely chopped
  • 1 jalapeño, diced (optional)
  • 2 cloves garlic, minced
  • 1 tbsp olive oil
  • Fresh cilantro, chopped (for garnish)
  • Tortilla chips or warm tortillas (for serving)

Instructions
 

  • Preheat your oven to 375°F (190°C).
  • Heat a cast-iron skillet over medium heat and add the olive oil.
  • Cook the chorizo, breaking it apart with a spoon, until browned (about 5-7 minutes).
  • Add the chopped onion, jalapeño, and garlic. Sauté until the vegetables are soft (about 3 minutes).
  • Remove from heat and drain any excess grease.
  • Sprinkle the shredded Monterey Jack and cheddar cheese evenly over the chorizo mixture.
  • Transfer the skillet to the preheated oven and bake until the cheese is melted and bubbly (about 10 minutes).
  • Remove from the oven and let cool slightly before serving.
  • Garnish with fresh cilantro and serve hot with tortilla chips or warm tortillas.

Notes

  • Use your favorite blend of melting cheeses for extra flavor.
  • Adjust the spiciness by adding more or less jalapeño.
