Ingredients
  

  • 8 ounces rice noodles (bihon) or thin egg noodles
  • 2 tablespoons vegetable oil
  • 1 pound boneless chicken breast or thighs, thinly sliced
  • 1 small onion, sliced
  • 4 cloves garlic, minced
  • 2 cups cabbage, shredded
  • 1 cup carrots, julienned
  • 1 cup green beans, sliced
  • 4 cups chicken broth
  • 1 tablespoon oyster sauce
  • 1 teaspoon ground black pepper
  • 2 green onions, sliced
  • 2 hard-boiled eggs, sliced (optional)
  • Calamansi or lemon wedges, for serving

Instructions
 

  • Soak the Noodles:
    If using rice noodles, soak them in warm water for 10 minutes until softened. Drain and set aside.
  • Cook the Chicken:
    Heat oil in a large wok or skillet. Cook the chicken until lightly browned.
  • Sauté Aromatics:
    Add onion and garlic, and sauté until fragrant.
  • Add Vegetables:
    Stir in cabbage, carrots, and green beans. Cook for 3–4 minutes.
  • Add Sauce and Broth:
    Pour in soy sauce, oyster sauce, black pepper, and chicken broth. Bring to a simmer.
  • Cook the Noodles:
    Add the noodles and toss gently until they absorb the liquid and become tender.
  • Garnish and Serve:
    Top with green onions and sliced eggs. Serve with calamansi or lemon wedges.

  • Rice noodles and egg noodles both work well.
  • Do not over-soak rice noodles.
  • Use low-sodium broth if preferred.
  • Vegetables should remain slightly crisp.
