- 4 large bell peppers
- 1 cup cooked rice
- 1 cup chopped vegetables (carrots, peas, or corn)
- 1 small onion (chopped)
- 2 tablespoons olive oil
- 1 cup tomato sauce
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon paprika
- Fresh parsley or coriander
Wash bell peppers.Cut off tops.Remove seeds.Set aside.
Heat olive oil in a pan.Add onions and cook until soft.
Add vegetables and cook 5 minutes.Stir in cooked rice.
Add salt, pepper, and paprika.Mix well.
Fill peppers with rice mixture.Add tomato sauce on top.Sprinkle cheese if desired.
Preheat oven to 180°C (350°F).Place peppers in baking dish.Bake 25–30 minutes.Cook until peppers are tender.
Remove from oven.Garnish with parsley.Serve warm.
