- 1 medium cooked spaghetti squash, approximately 3 pounds
- 2 tablespoons extra-virgin olive oil
- 4 cloves garlic, finely minced
- ½–1 teaspoon red pepper flakes, depending on desired heat
- ½ teaspoon Italian seasoning
- ½ teaspoon salt
- ¼ teaspoon freshly ground black pepper
- 1 tablespoon fresh lemon juice
- ½ teaspoon lemon zest
- ¼ cup freshly grated Parmesan cheese
- 2 tablespoons fresh parsley, chopped
Prepare the Spaghetti Squash
If you already have cooked spaghetti squash, simply scrape the flesh into strands using a fork.If starting with a raw squash, cut it in half lengthwise and remove the seeds. Brush lightly with olive oil and roast at 400°F (200°C) for approximately 35–45 minutes, until tender.Let it cool slightly and scrape the flesh into spaghetti-like strands. For a faster method, spaghetti squash can also be cooked in an Instant Pot or microwave.
Heat the Olive Oil
Place a large skillet over medium heat.Add the olive oil and allow it to warm for approximately 30 seconds.
Sauté the Garlic and Chili
Add the minced garlic and red pepper flakes.Cook for approximately 30–60 seconds, stirring constantly. The garlic should become fragrant without turning dark brown. If you prefer a milder dish, start with ½ teaspoon of red pepper flakes.
Add the Squash
Add the cooked spaghetti squash strands to the skillet.Toss gently with the garlic and chili oil.Cook for 3–4 minutes, stirring occasionally, until the squash is heated through.Season
Season
Add Italian seasoning, salt, and black pepper.Toss thoroughly so the seasoning is evenly distributed throughout the squash strands.
Add Lemon
Turn the heat to low.Add fresh lemon juice and lemon zest.Toss gently for another 30 seconds. The lemon adds brightness and helps balance the heat from the chili flakes.
Add Parmesan
Turn off the heat.Sprinkle Parmesan cheese over the squash.Gently toss until the cheese begins to melt into the warm strands.
Garnish and Serve
Transfer the spicy spaghetti squash to serving bowls.Garnish with fresh parsley, additional Parmesan, and a small pinch of red pepper flakes.Serve immediately.
