Ingredients

  • 1 lb (450g) ground beef
  • 1 small onion, finely diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning or 2 tbsp homemade blend
  • ½ cup salsa or tomato sauce
  • 1 cup shredded cheddar or Mexican blend cheese
  • 10–12 small corn or flour tortillas
  • Cooking oil (for frying or brushing if baking)
  • Optional: sour cream, guacamole, salsa for dipping

Instructions

  • Cook the beef:In a skillet over medium heat, sauté onion and garlic for 2 minutes. Add ground beef and cook until browned. Drain excess fat.
  • Season & add salsa:Stir in taco seasoning and salsa. Simmer for 3–5 minutes until thickened. Remove from heat and mix in the shredded cheese.
  • Assemble the taquitos:Warm the tortillas slightly (in a pan or microwave) to make them pliable. Spoon 2 tablespoons of the beef mixture onto each tortilla, roll tightly, and secure with a toothpick if needed.
  • Cook the taquitos:
To fry: Heat oil in a skillet over medium-high heat. Fry taquitos seam-side down until golden brown (2–3 minutes per side).
To bake: Preheat oven to 425°F (220°C), place taquitos on a lined baking sheet, brush with oil, and bake for 15–18 minutes until crispy.
To air-fry: Spray taquitos with oil and air fry at 400°F (200°C) for 10–12 minutes.
  • Serve:Let cool slightly, then serve with dips and toppings of your choice.

Notes

  • Warm tortillas to prevent cracking during rolling.
  • You can freeze assembled uncooked taquitos and cook later directly from frozen.
