  • 1 can (14 oz) diced tomatoes, drained
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 6 small corn tortillas, cut into strips
  • 1½ cups shredded Mexican cheese blend
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • Salt and black pepper to taste

Instructions
 

  • Heat olive oil in a large skillet over medium heat. Add onion and bell pepper and cook for 4–5 minutes until softened.
  • Stir in the minced garlic and cook for 30 seconds until fragrant.
  • Add shredded chicken, chili powder, cumin, salt, and pepper. Stir to combine.
  • Pour in the enchilada sauce. Add diced tomatoes, black beans, and corn. Stir well.
  • Mix the tortilla strips into the skillet and allow them to absorb some of the sauce.
  • Reduce heat and simmer for 5–7 minutes until heated through.
  • Sprinkle shredded cheese evenly over the top. Cover and cook for 2–3 minutes until melted.
