Ingredients

  • 1 tablespoon olive oil
  • 1 pound (450 g) ground beef or Italian sausage
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 1 can (14.5 ounces / 411 g) diced tomatoes, undrained
  • 1 can (8 ounces / 227 g) tomato sauce
  • 2 cups beef or chicken broth
  • 8 ounces (225 g) uncooked penne or rotini pasta
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried oregano
  • ½ teaspoon paprika, optional
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper
  • ½ cup shredded mozzarella cheese
  • ¼ cup grated Parmesan cheese

Instructions

  • Chop the onion and bell pepper into small pieces. Mince the garlic and measure the remaining ingredients. Keep the pasta uncooked, as it will cook directly in the skillet with the sauce.
  • Heat the olive oil in a large, deep skillet over medium-high heat. Add the ground beef or Italian sausage and cook for 5–7 minutes, breaking it into small pieces with a wooden spoon.
  • Add the chopped onion and bell pepper to the skillet. Cook for approximately 3–4 minutes, stirring occasionally, until the vegetables begin to soften.
Stir in the minced garlic and cook for another 30 seconds until fragrant. Avoid burning the garlic, as it can make the dish taste bitter.
  • Add the Italian seasoning, dried oregano, paprika if using, salt, and black pepper. Stir thoroughly so the herbs and spices coat the meat and vegetables evenly.
These seasonings provide the signature Italian-inspired flavor that makes this skillet dinner so delicious.
  • Pour in the diced tomatoes, tomato sauce, and broth. Stir well, scraping the bottom of the skillet to release any flavorful browned bits.
Bring the mixture to a gentle boil. Taste the sauce and adjust the seasonings if needed.
  • Add the uncooked pasta to the skillet and stir until it is mostly submerged in the liquid. Reduce the heat to medium-low and cover with a lid.
Simmer for approximately 12–15 minutes, stirring every few minutes to prevent the pasta from sticking. Cooking time may vary depending on the pasta shape and brand.
If the mixture becomes too dry before the pasta is tender, add a little extra broth or hot water. If excess liquid remains, cook uncovered for another minute or two.
  • Once the pasta is tender and the sauce has thickened, reduce the heat to low. Sprinkle the mozzarella and Parmesan cheese over the top.
Cover the skillet for 1–2 minutes, allowing the cheese to melt into a creamy, delicious layer.
  • Remove the skillet from the heat and sprinkle with freshly chopped basil or parsley. Allow the dish to rest for 2 minutes so the sauce settles and the flavors come together.
Serve hot with garlic bread, a crisp green salad, or steamed vegetables for a complete meal.

Notes

  1. Choose the right skillet: Use a large, deep skillet with a lid to accommodate the pasta and sauce.
  2. Brown the meat properly: Browning adds a deeper, savory flavor to the finished dish.
  3. Use lean ground beef: Lean beef can reduce excess grease while maintaining a satisfying texture.
  4. Adjust the liquid: Different pasta shapes absorb different amounts of broth, so keep extra broth nearby.
  5. Avoid overcooking: Check the pasta near the end of the recommended cooking time.
  6. Customize the cheese: Mozzarella provides a stretchy texture, while Parmesan adds a salty, nutty flavor.
  7. Taste before serving: Adjust salt, pepper, herbs, and acidity to suit your preference.
  8. Let it rest briefly: A short resting period helps the sauce thicken and cling to the pasta.
