Ingredients
  

  • 1 cup fresh or frozen green peas
  • 1 bunch radishes (thinly sliced)
  • 2 tablespoons fresh parsley or dill (chopped)
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Instructions
 

  • If using fresh peas, blanch them in boiling water for 2–3 minutes, then transfer to ice water. Drain well.
  • Thinly slice the radishes using a knife or mandoline.
  • In a large bowl, combine radishes, peas, and chopped herbs.
  • In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  • Pour the dressing over the salad and toss gently.
  • Add feta cheese if desired.
  • Serve fresh or slightly chilled.
