Ingredients
  

  • Greens from 1 bunch of radishes (washed thoroughly)
  • 1 small potato (for creaminess, chopped)
  • 1 small onion (chopped)
  • 2 cloves garlic (minced)
  • 1 tablespoon olive oil or butter
  • 3 cups vegetable broth
  • Salt and black pepper to taste
  • 1 tablespoon lemon juice (optional)
  • 2 tablespoons cream (optional, for garnish)

Instructions
 

  • Wash radish tops thoroughly to remove any dirt or grit.
  • Heat olive oil in a pot and sauté onions until soft.
  • Add garlic and cook until fragrant.
  • Stir in chopped potato and cook for 2–3 minutes.
  • Add radish greens and sauté until wilted.
  • Pour in vegetable broth and bring to a boil.
  • Reduce heat and simmer for 15 minutes until vegetables are tender.
  • Blend the soup until smooth using a blender or immersion blender.
  • Season with salt, pepper, and lemon juice.
  • Serve warm with a swirl of cream if desired.
