  • ¼ cup sour cream

Instructions
 

  • Preheat oven to 325°F (165°C).Line an 8x8-inch baking pan with parchment paper.
  • In a bowl, whisk together flour, baking powder, and salt.In another bowl, cream butter and sugar until fluffy.Add egg and vanilla extract.Gradually mix in dry ingredients until a soft dough forms.Press dough evenly into the prepared baking pan.
  • Beat cream cheese until smooth.Add sugar and mix well.Add eggs one at a time.Mix in vanilla extract and sour cream until creamy.
  • Divide a small portion of cheesecake batter into six separate bowls.Color each bowl with one rainbow color.
  • Pour the plain cheesecake batter over the cookie crust.Drop small spoonfuls of each colored batter across the surface.Use a toothpick or skewer to gently swirl the colors into a rainbow pattern.
  • Bake for 30–35 minutes or until the center is set.Remove from oven and cool completely.
  • Refrigerate for at least 3 hours or overnight.
  • Lift from the pan using parchment paper.Cut into squares and garnish as desired.
