Ingredients
  

  • 1 pack ramen noodles (discard seasoning packet)
  • 1 tbsp sesame oil
  • 1/2 cup bell peppers, sliced
  • 1/2 cup carrots, julienned
  • 1/2 cup broccoli florets
  • 1/2 cup mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 tsp grated ginger
  • 2 tbsp soy sauce
  • 1 tsp rice vinegar
  • 1 tsp sriracha or chili sauce (optional)
  • 1 tsp honey or brown sugar
  • 1/2 tsp sesame seeds (for garnish)
  • 1/4 cup chopped green onions

Instructions
 

  • Cook the noodles: Boil ramen according to package instructions. Drain and set aside.
  • Prepare the sauce: In a small bowl, mix soy sauce, rice vinegar, sriracha, and honey.
  • Stir-fry vegetables: Heat sesame oil in a pan over medium heat. Add garlic and ginger, sautéing until fragrant.
  • Add veggies: Stir in bell peppers, carrots, broccoli, and mushrooms. Cook for 3-4 minutes until slightly tender.
  • Combine: Add cooked ramen noodles and sauce, tossing everything together for 1-2 minutes.
  • Serve: Garnish with sesame seeds and green onions. Enjoy hot!

Notes

  • Use any vegetables you have on hand, such as zucchini or snap peas.
  • Adjust spice levels by adding more or less sriracha.
