- 1  pack  ramen noodles (discard seasoning packet)
 - 1 tbsp sesame oil
 - 1/2   cup  bell peppers, sliced
 - 1/2   cup  carrots, julienned
 - 1/2   cup  broccoli florets 
 - 1/2   cup  mushrooms, sliced
 - 2 cloves garlic, minced
 - 1 tsp grated ginger
 - 2 tbsp  soy sauce
 - 1 tsp  rice vinegar
 - 1 tsp  sriracha or chili sauce (optional)
 - 1 tsp  honey or brown sugar
 - 1/2  tsp  sesame seeds (for garnish)
 - 1/4  cup  chopped green onions
 
 
Cook the noodles: Boil ramen according to package instructions. Drain and set aside.
Prepare the sauce: In a small bowl, mix soy sauce, rice vinegar, sriracha, and honey.
Stir-fry vegetables: Heat sesame oil in a pan over medium heat. Add garlic and ginger, sautéing until fragrant.
Add veggies: Stir in bell peppers, carrots, broccoli, and mushrooms. Cook for 3-4 minutes until slightly tender.
Combine: Add cooked ramen noodles and sauce, tossing everything together for 1-2 minutes.
Serve: Garnish with sesame seeds and green onions. Enjoy hot!
