Ingredients
  

  • 1 cup all-purpose flour
  • 1 cup old-fashioned rolled oats
  • ½ cup brown sugar, packed
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • ½ cup unsalted butter, melted
  • ¾ cup raspberry jam or preserves
  • 1 teaspoon vanilla extract

Instructions
 

  • Preheat oven to 350°F (175°C).
  • Grease or line an 8-inch square baking pan with parchment paper.
  • In a bowl, mix flour, oats, brown sugar, baking soda, and salt.
  • Stir in melted butter and vanilla until crumbly.
  • Press two-thirds of the mixture into the bottom of the pan to form the crust.
  • Spread raspberry jam evenly over the crust.
  • Sprinkle the remaining oat mixture on top as a crumbly layer.
  • Bake for 35–40 minutes, or until golden brown.
  • Cool completely before cutting into bars.

Notes

  • Use seedless raspberry jam for a smoother filling.
  • Let bars cool fully before slicing to avoid crumbling.
  • Substitute with strawberry or apricot jam for flavour variations.
