For the Pie Crust
- 2 prepared 9-inch pie crusts (homemade or store-bought)
For the Filling
- 5 cups peeled and sliced fresh peaches
- 2 cups fresh raspberries
- ¾ cup granulated sugar
- ¼ cup brown sugar
- ¼ cup cornstarch
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- ½ teaspoon ground cinnamon
- ¼ teaspoon salt
For the Topping
- 1 egg, beaten (egg wash)
- 1 tablespoon coarse sugar (optional)
Preheat the oven to 400°F (200°C).
Roll out one pie crust and fit it into a 9-inch pie dish.
In a large bowl, gently combine peaches, raspberries, granulated sugar, brown sugar, cornstarch, lemon juice, vanilla, cinnamon, and salt.
Spoon the filling into the prepared crust.
Cover with the second pie crust or create a lattice top.
Trim and crimp the edges to seal.
Brush the top crust with the beaten egg and sprinkle with coarse sugar if desired.
Cut a few small slits in the top crust if using a full crust.
Bake for 20 minutes, then reduce the oven temperature to 375°F (190°C) and bake for another 30–40 minutes, until the crust is golden and the filling is bubbling.
Cool for at least 2 hours before slicing to allow the filling to set.
- Use ripe but firm peaches for the best texture.
- Fresh raspberries provide the brightest flavor.
- Frozen fruit may be used; increase the cornstarch slightly if needed.
- Place a baking sheet under the pie to catch any drips.
- Allow the pie to cool completely for cleaner slices.
- A lattice crust helps release steam during baking.
- Adjust the sugar depending on the sweetness of the fruit.
- Serve with vanilla ice cream or whipped cream for an extra-special dessert.
