Ingredients
  

For the Crust

  • 1½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • Pinch of salt

For the Raspberry Swirl

  • 1½ cups fresh raspberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch mixed with 2 tablespoons water

For the Cheesecake Filling

  • 24 ounces cream cheese, softened
  • ¾ cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup sour cream
  • ¼ teaspoon salt

Instructions
 

  • Preheat the oven to 325°F (165°C). Line an 8x8-inch baking pan with parchment paper.
  • Combine graham cracker crumbs, sugar, salt, and melted butter in a bowl. Mix until evenly combined.
  • Press the crust mixture firmly into the bottom of the prepared pan.
  • Bake the crust for 10 minutes, then allow it to cool slightly.
  • Prepare the raspberry swirl by cooking raspberries, sugar, and lemon juice in a saucepan over medium heat until softened.
  • Stir in the cornstarch mixture and cook until thickened. Strain if you prefer a smooth sauce, then cool.
  • Beat softened cream cheese and sugar until smooth and creamy.
  • Add eggs one at a time, mixing gently after each addition.
  • Mix in vanilla extract, sour cream, and salt until combined.
  • Drop spoonfuls of raspberry sauce over the cheesecake layer.
  • Use a toothpick or knife to create beautiful swirls.
  • Bake for 30–35 minutes, until the center is almost set.
  • Slice into bars and garnish with fresh raspberries before serving.
