For the Crust
- 1½ cups graham cracker crumbs
- ¼ cup granulated sugar
- ½ cup unsalted butter, melted
- Pinch of salt
For the Raspberry Swirl
- 1½ cups fresh raspberries
- ¼ cup granulated sugar
- 1 tablespoon lemon juice
- 1 tablespoon cornstarch mixed with 2 tablespoons water
For the Cheesecake Filling
- 24 ounces cream cheese, softened
- ¾ cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup sour cream
- ¼ teaspoon salt
Preheat the oven to 325°F (165°C). Line an 8x8-inch baking pan with parchment paper.
Combine graham cracker crumbs, sugar, salt, and melted butter in a bowl. Mix until evenly combined.
Press the crust mixture firmly into the bottom of the prepared pan.
