Ingredients
  

For the Tomato Sauce

  • 2 tablespoons extra-virgin olive oil
  • 1 medium yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 can (14 ounces) crushed tomatoes
  • 2 tablespoons tomato paste
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano
  • ½ teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ¾ teaspoon salt
  • 2 tablespoons fresh basil, chopped

For the Vegetables

  • 2 medium zucchini
  • 1 medium yellow squash
  • 1 medium eggplant
  • 3–4 medium Roma tomatoes
  • 1 red bell pepper
  • 1 yellow bell pepper
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon dried thyme
  • ½ teaspoon dried oregano

For Garnishing

  • Fresh basil leaves
  • Fresh parsley
  • Fresh thyme
  • 2 tablespoons grated Parmesan, optional
  • Drizzle of extra-virgin olive oil

Instructions
 

Prepare the Vegetables

  • Wash and dry all the vegetables thoroughly.
    Slice the zucchini, yellow squash, eggplant, and tomatoes into thin rounds approximately ¼ inch thick.
    Try to keep the slices relatively similar in thickness so they cook evenly.

Prepare the Bell Peppers

  • Remove the seeds and membranes from the bell peppers.
    Cut them into thin strips or small pieces.
    Set the prepared vegetables aside.

Prepare the Tomato Sauce

  • Heat 2 tablespoons of olive oil in a skillet over medium heat.
    Add the chopped onion and cook for approximately 4–5 minutes, until softened.
    Add the minced garlic and cook for another 30–60 seconds.

Add the Tomatoes

  • Stir in the crushed tomatoes and tomato paste.
    Add the thyme, oregano, smoked paprika, black pepper, salt, and optional sugar.
    Simmer the sauce for approximately 8–10 minutes, stirring occasionally.

Add Fresh Basil

  • Turn off the heat.
    Stir in the chopped fresh basil.
    Taste the sauce and adjust the seasoning if necessary.

Prepare the Baking Dish

  • Preheat the oven to 375°F (190°C).
    Lightly grease a large round or oval baking dish with olive oil.
    Spread the tomato sauce evenly across the bottom of the dish.

Arrange the Vegetables

  • Arrange the sliced zucchini, yellow squash, eggplant, and tomatoes in alternating rows or overlapping circles.
    Tuck the bell pepper pieces between the vegetable slices.
    Continue arranging until the entire surface of the dish is covered.

Season the Vegetables

  • Drizzle the vegetables with 2 tablespoons of olive oil.
    Sprinkle evenly with thyme, oregano, black pepper, and salt.
    For additional flavor, add a few thin slices of garlic between the vegetables.

Cover and Bake

  • Cover the baking dish loosely with aluminum foil.
    Bake for approximately 30 minutes.
    The covered baking time helps the vegetables soften without drying out.

Finish Baking Uncovered

  • Remove the foil.
    Return the dish to the oven and bake for another 15–20 minutes, or until the vegetables are tender and the edges are lightly caramelized.
    If you prefer more browning, place the dish under the broiler for 1–2 minutes at the end, watching carefully.

Garnish

  • Scatter fresh basil and parsley over the top.
    Add fresh thyme and a light drizzle of olive oil.
    For a richer finish, sprinkle with freshly grated Parmesan

Serve

  • Serve warm with crusty bread, rice, quinoa, couscous, pasta, or roasted potatoes.
    For a complete vegetarian meal, pair it with a simple green salad and warm bread.

Notes

  • Vegetable size: Try to slice the vegetables evenly so they cook at approximately the same rate.
  • Eggplant: Smaller or medium eggplants generally have a tender texture and work particularly well.
  • Tomatoes: Roma tomatoes are excellent because they contain less water than many larger tomatoes.
  • Sauce consistency: If your tomato sauce is very watery, simmer it slightly longer before adding it to the baking dish.
  • Herbs: Fresh basil and thyme provide excellent flavor, but dried herbs can be used when necessary.
  • Cheese: Parmesan is optional and can be omitted for a vegan version.
  • Spice: Add red pepper flakes if you prefer a little heat.
