Ingredients
  

  • 1 cup fine rava (semolina/sooji)
  • ¾ cup powdered sugar
  • ¼ cup ghee, plus more if needed
  • 2 tablespoons chopped cashews
  • 1 tablespoon chopped almonds
  • ½ teaspoon cardamom powder
  • 2 tablespoons desiccated coconut, optional
  • 1–2 tablespoons warm milk, only if needed for binding

Instructions
 

Roast the Nuts

  • Heat 1 teaspoon of ghee in a heavy-bottomed pan over low heat. Add the cashews and almonds and sauté until lightly golden. Add the raisins and cook for a few seconds until they plump up.
    Remove the nuts and raisins from the pan and set them aside.

Roast the Rava

  • Add the rava to the same pan. Keep the heat low and roast slowly, stirring continuously.
    Roast for about 8–12 minutes, or until the rava becomes aromatic and lightly golden. Do not brown the rava, as over-roasting can give the laddus a bitter or overly toasted flavor.

Add Ghee

  • Add the remaining ghee gradually while stirring the roasted rava. Continue cooking for another 2–3 minutes until the mixture looks moist and fragrant.
    Turn off the heat and allow the mixture to cool slightly.

Combine the Ingredients

  • Transfer the warm roasted rava to a large mixing bowl. Add powdered sugar, cardamom powder, roasted nuts, raisins, and desiccated coconut if using.
    Mix everything thoroughly

Shape the Laddus

  • While the mixture is still warm enough to handle, take a small portion in your palm and press it together firmly.
    Roll it between your palms to form a smooth round laddu. Repeat with the remaining mixture.

Cool and Store

  • Allow the laddus to cool completely before transferring them to an airtight container.
    Serve at room temperature with tea, coffee, or as a festive dessert.

Notes

  • Fine rava gives Rava Laddu a smoother and more delicate texture.
  • Roast the rava patiently over low heat for the best flavor.
  • Powdered sugar blends more evenly than regular granulated sugar.
  • Fresh cardamom powder provides a much stronger aroma.
  • Add ghee gradually instead of adding it all at once.
  • Shape the laddus while the mixture is warm.
  • Milk is optional and should be used only when necessary.
  • Let the laddus cool completely before storing them.
