Ingredients
  

  • 4 cups masa harina
  • 2½ cups warm chicken or vegetable broth
  • 1 cup lard or vegetable shortening
  • 2 teaspoons baking powder
  • 2 teaspoons salt
  • 30–40 dried corn husks, soaked in warm water

Instructions
 

  • Soak corn husks in warm water for at least 30 minutes until pliable.
  • In a large bowl, beat lard until fluffy. Mix in masa harina, baking powder, and salt.
  • Gradually add warm broth and beat until the dough is soft and spreadable.
  • Spread a thin layer of masa onto each corn husk.
  • Add filling down the center of the masa.
  • Fold sides inward, then fold the bottom up to seal.
  • Stand tamales upright in a steamer and steam for 1½–2 hours.

  • Masa should be soft but not sticky.
  • Proper steaming ensures tender tamales.
  • Corn husks are not eaten.
  • Tamales taste better after resting a few minutes.
