Materials

  • 2 medium raw green mangoes, peeled and chopped
  • ½ cup jaggery, grated, or adjust to taste
  • 1–2 green chilies, chopped
  • 1-inch piece fresh ginger, chopped
  • ½ teaspoon turmeric powder
  • ½ teaspoon red chili powder
  • 1 teaspoon roasted cumin powder
  • ½ teaspoon coriander powder
  • ½ teaspoon salt, or to taste
  • ¼ teaspoon black pepper powder
  • ½ cup water, as needed

Instructions

Prepare the Mangoes

  • Wash the raw mangoes thoroughly and peel them. Remove the hard seed and cut the mango flesh into small pieces. Using firm, sour raw mangoes gives the chutney its characteristic flavor.

Cook the Mango

  • Add the chopped mango, turmeric powder, salt, ginger, green chilies, and water to a saucepan. Cook over medium heat for approximately 8–10 minutes, or until the mango becomes soft.

Add the Spices

  • Once the mango has softened, add red chili powder, roasted cumin powder, coriander powder, and black pepper. Stir well so the spices coat the mango evenly.

Add Jaggery

  • Add grated jaggery and continue cooking over low to medium heat. Stir frequently as the jaggery melts and combines with the sour mango.

Adjust the Texture

  • Cook until the mixture reaches your preferred consistency. For a spoonable chutney, cook until thick and glossy. For a fresher, thinner chutney, add a small amount of warm water.

Blend if Desired

  • Allow the mixture to cool slightly. You can leave it chunky for a rustic texture or blend it into a smooth chutney using a blender.

Finish the Chutney

  • Pour the tempering over the prepared mango chutney and mix well. Taste and adjust the salt, jaggery, or chili according to your preference.

Serve

  • Serve warm, at room temperature, or chilled. Mango chutney pairs beautifully with rice, dal, roti, paratha, dosa, idli, pakoras, samosas, and many Indian snacks.

Notes

  • Choose firm, sour raw mangoes rather than ripe or soft mangoes for the best traditional flavor.
  • The amount of jaggery depends on how sour your mangoes are.
  • Very sour mangoes may require additional jaggery for balance.
  • Roasted cumin powder adds much more aroma than unroasted cumin powder.
  • You can make the chutney smooth or leave small mango pieces for a rustic texture.
  • The chutney naturally thickens further as it cools.
  • Always use a clean, dry spoon when serving stored chutney.
  • Refrigerate leftover chutney in a clean airtight container.
