- 2 medium raw green mangoes, peeled and chopped
- ½ cup jaggery, grated, or adjust to taste
- 1–2 green chilies, chopped
- 1-inch piece fresh ginger, chopped
- ½ teaspoon turmeric powder
- ½ teaspoon red chili powder
- 1 teaspoon roasted cumin powder
- ½ teaspoon coriander powder
- ½ teaspoon salt, or to taste
- ¼ teaspoon black pepper powder
- ½ cup water, as needed
Cook the Mango
Add the chopped mango, turmeric powder, salt, ginger, green chilies, and water to a saucepan. Cook over medium heat for approximately 8–10 minutes, or until the mango becomes soft.
Add the Spices
Once the mango has softened, add red chili powder, roasted cumin powder, coriander powder, and black pepper. Stir well so the spices coat the mango evenly.
Adjust the Texture
Cook until the mixture reaches your preferred consistency. For a spoonable chutney, cook until thick and glossy. For a fresher, thinner chutney, add a small amount of warm water.
Serve
Serve warm, at room temperature, or chilled. Mango chutney pairs beautifully with rice, dal, roti, paratha, dosa, idli, pakoras, samosas, and many Indian snacks.
- Choose firm, sour raw mangoes rather than ripe or soft mangoes for the best traditional flavor.
