  • 1 tsp baking powder
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp salt
  • 1 egg
  • ¾ cup beer (or club soda)
  • Oil for frying (vegetable or canola)

Instructions

  • Heat oil in a deep fryer or heavy pot to 375°F (190°C).
  • In a bowl, whisk flour, baking powder, garlic powder, paprika, and salt.
  • Add the egg and beer. Mix until smooth.
  • Dip cheese curds into the batter, coating evenly.
  • Fry in small batches until golden brown, about 1–2 minutes.
  • Remove with a slotted spoon and drain on paper towels.
  • Serve immediately with ranch or marinara dipping sauce.

Notes

  • Use fresh curds for the best squeaky texture.
  • Beer adds flavour and lightness to the batter.
  • Don’t overcrowd the fryer to maintain crispiness.
  • Serve hot for maximum gooeyness.
  • Pair with a cold Wisconsin beer for authenticity.
