Ingredients
  

  • 1 can (12 oz) of pork
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 cup diced tomatoes (canned or fresh)
  • 1/2 tsp smoked paprika
  • 1/2 tsp black pepper
  • Salt, to taste
  • 1 cup cooked rice or pasta (optional, for serving)
  • Fresh parsley or cilantro for garnish (optional)

Instructions
 

  • Heat olive oil in a skillet over medium heat.
  • Add chopped onion and garlic. Sauté until fragrant and translucent, about 3 minutes.
  • Open the can of pork and drain any excess liquid. Shred or chop the pork as needed.
  • Add the pork to the skillet and cook for 5 minutes, stirring occasionally.
  • Stir in the diced tomatoes, smoked paprika, black pepper, and salt. Simmer for 7-10 minutes until heated through and the flavors meld together.
  • Serve the pork mixture over cooked rice or pasta if desired.
  • Garnish with fresh parsley or cilantro before serving.
