Ingredients
  

For the Pie Crust

  • 2½ cups all-purpose flour
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt
  • 1 cup cold unsalted butter, cut into small cubes
  • 6–8 tablespoons ice water
  • 1 teaspoon lemon juice or apple cider vinegar

For the Red Currant Filling

  • 4 cups fresh red currants
  • ¾ cup granulated sugar
  • ¼ cup cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

For the Egg Wash

  • 1 egg
  • 1 tablespoon milk or water

For Finishing

  • 1 tablespoon coarse sugar, optional
  • Powdered sugar, optional
  • Vanilla ice cream or whipped cream, for serving

Instructions
 

Prepare the Pie Dough

  • In a large bowl, combine the flour, sugar, and salt. Add the cold butter and cut it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter remaining.

Add the Liquid

  • Mix the lemon juice with 6 tablespoons of ice water. Gradually drizzle it into the flour mixture, gently mixing until the dough begins to come together. Add another tablespoon or two of water only if necessary.
    Avoid overworking the dough because keeping small pieces of butter intact helps create a flaky crust.

Chill the Dough

  • Divide the dough into two portions, with one slightly larger portion for the bottom crust. Shape each portion into a disk and wrap tightly.
    Refrigerate for at least 30 minutes.

Prepare the Red Currants

  • Wash the red currants gently and remove the stems. Pat them dry carefully with a clean kitchen towel.
    Place the currants in a large bowl and add the sugar, cornstarch, lemon zest, lemon juice, vanilla, optional cinnamon, and salt. Toss gently until evenly coated.

Roll Out the Bottom Crust

  • Preheat the oven to 400°F (200°C).
    Lightly flour your work surface and roll the larger dough disk into a circle approximately 12 inches in diameter.
    Carefully transfer the dough to a 9-inch pie dish and gently press it into the bottom and sides without stretching it.

Add the Filling

  • Pour the prepared red currant mixture into the crust. Spread the berries evenly.
    The filling may appear slightly dry before baking, but the currants will release plenty of juice in the oven.

Vent the Pie

  • If using a full top crust, cut several small slits in the center. These vents allow steam to escape while the pie bakes.

Bake the Pie

  • Place the pie on a baking sheet to catch any bubbling juices.
    Bake at 400°F (200°C) for 20 minutes. Reduce the temperature to 375°F (190°C) and continue baking for another 25–35 minutes, or until the crust is deeply golden and the filling is bubbling.

Cool Completely

  • Remove the pie from the oven and place it on a cooling rack.
    Allow it to cool for at least 2 hours before slicing. This gives the filling time to thicken and prevents the slices from becoming overly runny.

Serve

  • Slice the Red Currant Pie and serve at room temperature or slightly warm.
    Add a scoop of vanilla ice cream, whipped cream, or a light dusting of powdered sugar for an extra-special dessert.

  • Use ripe currants: Choose bright red, firm currants without mold or excessive softness.
  • Remove the stems: Currant stems can be tough, so remove them before preparing the filling.
  • Fresh or frozen: Frozen red currants can work, although they may release additional liquid.
