Ingredients
Red Layer – Strawberry Cocktail
- 1 cup fresh strawberries
- 2 tablespoons sugar
- 2 tablespoons lime juice
- ¼ cup white rum or vodka
- ¼ cup water
White Layer – Coconut Cream
- 1 cup coconut milk
- 2 tablespoons sweetened condensed milk
- 2 tablespoons coconut rum (optional)
- ½ teaspoon vanilla extract
Blue Layer – Blueberry Cocktail
- 1 cup fresh blueberries
- 2 tablespoons sugar
- 2 tablespoons lemon juice
- ¼ cup vodka or white rum
- ¼ cup water
- Few drops blue food coloring (optional)
Instructions
- Blend strawberries, sugar, lime juice, alcohol, and water until smooth.
- Pour the red mixture into ice pop molds, filling each about one-third full.
- Freeze for 1–2 hours until slightly firm.
- Blend coconut milk, condensed milk, vanilla, and coconut rum.
- Freeze again for 1–2 hours.
- Blend blueberries, sugar, lemon juice, alcohol, and water.
- Add the blue layer on top.
- Insert sticks and freeze completely for at least 4 hours.
- To serve, run molds briefly under warm water and gently remove pops.
Notes
- These ice pops are intended for adults only.
- Alcohol slows freezing, so use moderate amounts.
- Too much alcohol may prevent the pops from becoming firm.
