  • 1 small onion, finely diced
  • 4 cloves garlic, minced
  • 3 tablespoons tomato paste
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup reserved pasta water
  • Fresh parsley, chopped

Instructions
 

  • Boil pasta in salted water until al dente. Reserve 1 cup of pasta water before draining.
  • Heat olive oil in a large skillet over medium heat. Add onion and cook until soft, about 5 minutes. Stir in garlic and cook for 30 seconds.
  • Add tomato paste, oregano, and red pepper flakes. Cook for 2–3 minutes until the paste darkens and becomes fragrant.
  • Slowly add reserved pasta water while stirring. The sauce will become glossy and smooth.
  • Add cooked pasta and toss. Stir in Parmesan and butter until melted and creamy.
  • Top with parsley and extra Parmesan. Serve immediately.
