  • 4 medium fresh beets
  • 4 cups arugula or mixed salad greens
  • ¾ cup crumbled feta cheese
  • ¼ small red onion, thinly sliced
  • 2 tablespoons chopped fresh parsley
  • 1 tablespoon fresh mint, chopped (optional)

For the Dressing

  • 3 tablespoons extra virgin olive oil
  • 1½ tablespoons balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey
  • 1 garlic clove, finely minced
  • ½ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Wash and trim the beets, then wrap each beet individually in aluminum foil.
  • Place them on a baking sheet and roast for 40–50 minutes, or until fork-tender.
  • Allow the beets to cool slightly, then peel off the skins using paper towels or your hands.
  • Cut into wedges or bite-sized cubes.
  • Arrange the arugula or mixed greens on a serving platter.
  • Drizzle the vinaigrette evenly over the salad.
  • Gently toss if desired or serve layered for a beautiful presentation.
  • Finish with chopped parsley and fresh mint.
  • Serve immediately at room temperature or slightly chilled.
