- 1½ pounds fresh broccoli, cut into medium-sized florets
- 4–5 garlic cloves, finely minced
- 3 tablespoons extra virgin olive oil
- ½ teaspoon kosher salt
- ¼ teaspoon freshly ground black pepper
- 1 teaspoon lemon zest
- 1½ tablespoons fresh lemon juice
- 2 tablespoons grated Parmesan cheese, optional
- 1 tablespoon chopped fresh parsley, for garnish
- ¼ teaspoon red pepper flakes, optional
Preheat your oven to 425°F (220°C).
Place a large baking sheet in the oven while it preheats. A hot baking sheet helps the broccoli develop beautifully browned edges.
Wash the broccoli thoroughly and dry it very well. Excess moisture can prevent proper browning.
Cut the broccoli into evenly sized florets so they roast at approximately the same rate.
Add olive oil, minced garlic, salt, black pepper, Italian seasoning, and lemon zest. Toss thoroughly until every floret is lightly coated.
Carefully spread the broccoli across the hot baking sheet.
Arrange the florets in a single layer, leaving some space between them. Crowding the pan can cause the broccoli to steam rather than roast.
Return it to the oven and roast for another 5–10 minutes, or until the broccoli is tender and the edges are deeply golden and crisp.
Immediately drizzle with fresh lemon juice and toss gently.
Taste and adjust the salt and pepper if needed.
Serve immediately while the broccoli is hot and crisp.
- Dry the broccoli thoroughly before roasting for better browning.
- Fresh broccoli generally provides the best roasted texture.
- Cut florets into similar sizes for even cooking.
- Don't overcrowd the baking sheet.
- Freshly squeezed lemon juice provides a brighter flavor than bottled lemon juice.
- Add the lemon juice after roasting to preserve its fresh citrus flavor.
- Parmesan is optional but adds a delicious savory finish.
- Leftovers can be refrigerated in an airtight container for up to 3 days.
