500 g pumpkin or butternut squash, peeled and cut into 2 cm cubes
1 tablespoon olive oil
½ teaspoon salt
¼ teaspoon freshly ground black pepper
½ teaspoon dried thyme or 1 teaspoon fresh thyme leaves
For the Risotto
1½ cups Arborio rice
1 medium yellow onion, finely chopped
2 garlic cloves, minced
1 tablespoon olive oil
1 tablespoon unsalted butter
½ cup dry white wine, optional
5–6 cups vegetable stock, kept warm
½ teaspoon salt, or to taste
¼ teaspoon freshly ground black pepper
½ teaspoon dried thyme or 1 tablespoon chopped fresh herbs
For the Cheese and Finishing Touches
150 g feta cheese, crumbled
½ cup finely grated Parmesan cheese
1 tablespoon unsalted butter, optional, for extra creaminess
1 tablespoon fresh lemon juice, optional
Fresh sage or parsley, for garnish
Instructions
Preheat your oven to 400°F (200°C). Line a baking tray with parchment paper or lightly grease it with olive oil.Peel the pumpkin, remove the seeds, and cut the flesh into evenly sized cubes. Uniform pieces cook more evenly and develop a beautiful golden color.
Place the pumpkin cubes on the baking tray. Drizzle with olive oil and sprinkle with salt, black pepper, and thyme. Toss until all the pieces are lightly coated.Spread the cubes in a single layer, leaving a little space between them. Roast for approximately 25–30 minutes, turning once halfway through, until tender and caramelized around the edges.Remove the pumpkin from the oven and set aside. Reserve a few attractive cubes for garnish if desired.
Pour the vegetable stock into a small saucepan and heat it over low heat. Keep it warm throughout the risotto-making process.Adding warm stock helps maintain a steady cooking temperature and allows the rice to absorb the liquid more evenly.
Heat the olive oil and 1 tablespoon of butter in a large, heavy-bottomed saucepan over medium-low heat.Add the chopped onion and cook for 4–5 minutes until soft and translucent. Stir in the minced garlic and cook for another 30 seconds, taking care not to let it brown.
Add the Arborio rice to the saucepan. Stir for 1–2 minutes so that each grain becomes coated with the oil and butter. The rice should look slightly translucent around the edges while remaining opaque in the center. This brief toasting step helps the grains maintain their structure during cooking.
If using white wine, pour it into the saucepan and stir continuously until most of the liquid has evaporated. The wine contributes acidity and depth to the risotto. If you prefer not to use alcohol, skip this step and proceed directly to adding the warm stock.
Add one ladleful of warm vegetable stock to the rice. Stir gently and allow the liquid to be mostly absorbed before adding another ladleful.Continue adding stock gradually, stirring regularly. Maintain a gentle simmer rather than a vigorous boil. After approximately 18–22 minutes, the rice should be creamy and tender while retaining a slight bite in the center. You may not need all the stock, or you may need a little extra. Judge the texture rather than relying only on the exact quantity.
Reserve a few roasted pumpkin cubes for serving. Gently fold the remaining pumpkin into the risotto. Some cubes will remain intact, while others may soften into the rice and create a naturally rich, golden texture. If you prefer an especially creamy risotto, lightly mash a few pieces before stirring them in.
Remove the saucepan from the heat. Stir in the Parmesan cheese and, if desired, the additional tablespoon of butter.Fold in most of the crumbled feta, reserving a little for garnish. Add black pepper and taste before adding more salt because feta and Parmesan are already salty. If the risotto becomes too thick, stir in a small splash of warm stock. The ideal consistency should be creamy and gently flowing rather than stiff or dry.
Add the optional lemon juice for a bright, fresh finish. Divide the risotto among warm bowls and top with the reserved roasted pumpkin cubes.Finish with extra crumbled feta, fresh sage or parsley, and toasted pumpkin seeds if desired. Serve immediately while the rice is creamy and the cheese is soft.
Notes
Choose the right rice: Arborio rice is widely available and creates a creamy risotto. Carnaroli rice is another excellent option if you can find it.
Roast instead of boiling the pumpkin: Roasting concentrates the pumpkin's flavor and creates caramelized edges that add depth to the dish.
Keep the stock warm: Warm stock helps the rice cook steadily without repeatedly lowering the temperature of the pan.
Add stock gradually: Adding the liquid in stages allows the rice to release starch and develop its characteristic creamy consistency.
Avoid rinsing the rice: Rinsing removes surface starch that helps make risotto creamy.
Season after adding the cheese: Feta and Parmesan contain salt, so taste the dish before adding extra seasoning.
Use feta according to your preference: Greek-style feta gives a stronger tang, while milder feta-style cheeses create a gentler flavor.
Serve immediately: Risotto thickens as it stands. Keep a little warm stock available to loosen it just before serving.
