For the Crostini
- 1 French baguette, sliced into ½-inch pieces
- 2 cups cherry or grape tomatoes
- 2 tablespoons extra virgin olive oil
- 2 garlic cloves, minced
- 1 teaspoon dried oregano
- ½ teaspoon sea salt
- ¼ teaspoon black pepper
- 2 ripe avocados, sliced or lightly mashed
- 200 g fresh mozzarella, sliced or torn into small pieces
- ¼ cup fresh basil leaves, chopped
- 2 tablespoons balsamic glaze
- Extra basil leaves for garnish
Preheat the oven to 400°F (200°C). Toss the tomatoes with olive oil, garlic, oregano, salt, and pepper. Spread them on a baking tray and roast for 18–20 minutes until softened and lightly caramelized.
Arrange the baguette slices on another baking tray. Brush lightly with olive oil and toast in the oven for 5–7 minutes until golden and crisp.
Slice the avocados or mash them lightly with a pinch of salt and a squeeze of lemon juice to help maintain their color.
Spread or layer the avocado onto each toasted bread slice. Top with roasted tomatoes and pieces of fresh mozzarella.
Sprinkle chopped basil evenly over each crostini.
Drizzle balsamic glaze over the assembled crostini for a touch of sweetness and tang.
Decorate with whole basil leaves and an extra drizzle of olive oil if desired.
Serve immediately while the bread is crisp and the toppings are fresh.
