- 12 fresh oysters, shucked (on the half shell)
- 4 tablespoons unsalted butter, softened
- 1 cup fresh spinach (or mixed greens), finely chopped
- 1 clove garlic, minced
- ¼ cup breadcrumbs or panko

- 1 tablespoon fresh parsley, chopped
