Ingredients
  

  • 2 boneless, skinless chicken breasts
  • 2 tbsp olive oil
  • 1/2 cup mushrooms, sliced
  • 1/2 cup artichoke hearts, chopped
  • 1/2 cup chicken broth
  • 1/2 cup heavy cream
  • 2 cloves garlic, minced
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp dried thyme
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp Parmesan cheese, grated
  • 1 tbsp fresh parsley, chopped (for garnish)

Instructions
 

  • Prepare the chicken:
    Season the chicken breasts with salt, pepper, and thyme.
  • Sear the chicken:
    Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside.
  • Sauté mushrooms and garlic:
    In the same skillet, add mushrooms and garlic. Sauté until softened, about 3 minutes.
  • Add artichokes and broth:
    Stir in artichoke hearts and chicken broth, bringing to a simmer.
  • Incorporate cream:
    Pour in the heavy cream and stir well. Simmer for 3-4 minutes until the sauce thickens.
  • Return chicken to skillet:
    Place the chicken back into the skillet, coating it with the sauce. Simmer for another 5 minutes until fully cooked.
  • Finish with Parmesan:
    Sprinkle Parmesan cheese over the dish and let it melt into the sauce.
  • Serve:
    Garnish with fresh parsley and serve warm.

Notes

  • For extra richness, use half-and-half instead of heavy cream.
  • Serve with pasta, rice, or crusty bread for a complete meal.
