- 2 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1/2 cup mushrooms, sliced
- 1/2 cup artichoke hearts, chopped
- 1/2 cup chicken broth
- 1/2 cup heavy cream
- 2 cloves garlic, minced
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp dried thyme
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp Parmesan cheese, grated
- 1 tbsp fresh parsley, chopped (for garnish)
Prepare the chicken: Season the chicken breasts with salt, pepper, and thyme. Sear the chicken: Heat olive oil in a skillet over medium-high heat. Sear the chicken for 4-5 minutes per side until golden brown. Remove and set aside. Sauté mushrooms and garlic: In the same skillet, add mushrooms and garlic. Sauté until softened, about 3 minutes. Add artichokes and broth: Stir in artichoke hearts and chicken broth, bringing to a simmer. Incorporate cream: Pour in the heavy cream and stir well. Simmer for 3-4 minutes until the sauce thickens. Return chicken to skillet: Place the chicken back into the skillet, coating it with the sauce. Simmer for another 5 minutes until fully cooked. Finish with Parmesan: Sprinkle Parmesan cheese over the dish and let it melt into the sauce. Serve: Garnish with fresh parsley and serve warm.
