Saag Paneer

- 2 cups fresh spinach (or mustard greens)
- 1 cup paneer, cubed
- 1 tbsp ghee or oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 -inch ginger, grated
- 1 green chili, chopped (optional)
- 1 tsp cumin seeds
- 1 tsp coriander powder
- 1/2 tsp turmeric powder
- 1/2 tsp garam masala
- 1/2 tsp salt (or to taste)
- 1/4 cup heavy cream or yogurt (optional)
- 1/4 cup water
Wash and blanch the spinach in boiling water for 2 minutes. Drain and blend into a smooth purée.
Heat ghee or oil in a pan and add cumin seeds. Let them sizzle.
Add chopped onions and sauté until golden brown.
Stir in garlic, ginger, and green chili, and cook for another minute.
Add turmeric, coriander powder, and salt. Mix well.
Pour in the spinach purée and cook for 5-7 minutes, stirring occasionally.
Gently fold in the paneer cubes and simmer for another 5 minutes.
Finish with a sprinkle of garam masala and a drizzle of cream or yogurt (if using).
Serve hot with naan or rice.

You can use frozen spinach if fresh is unavailable.

Mustard greens can be mixed with spinach for a more traditional taste.
