Saag Paneer

Ingredients
  

  • 2 cups fresh spinach (or mustard greens)
  • 1 cup paneer, cubed
  • 1 tbsp ghee or oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 -inch ginger, grated
  • 1 green chili, chopped (optional)
  • 1 tsp cumin seeds
  • 1 tsp coriander powder
  • 1/2 tsp turmeric powder
  • 1/2 tsp garam masala
  • 1/2 tsp salt (or to taste)
  • 1/4 cup heavy cream or yogurt (optional)
  • 1/4 cup water

Instructions
 

  • Wash and blanch the spinach in boiling water for 2 minutes. Drain and blend into a smooth purée.
  • Heat ghee or oil in a pan and add cumin seeds. Let them sizzle.
  • Add chopped onions and sauté until golden brown.
  • Stir in garlic, ginger, and green chili, and cook for another minute.
  • Add turmeric, coriander powder, and salt. Mix well.
  • Pour in the spinach purée and cook for 5-7 minutes, stirring occasionally.
  • Gently fold in the paneer cubes and simmer for another 5 minutes.
  • Finish with a sprinkle of garam masala and a drizzle of cream or yogurt (if using).
  • Serve hot with naan or rice.

Notes

  • You can use frozen spinach if fresh is unavailable.
  • Mustard greens can be mixed with spinach for a more traditional taste.
