Ingredients
  

For the Sushi Rice

  • 1 cup sushi rice
  • 1¼ cups water
  • 2 tablespoons rice vinegar
  • 1 tablespoon granulated sugar
  • ½ teaspoon salt

For the Cucumber Boats

  • 2 large English cucumbers
  • 1 teaspoon sesame seeds
  • 2 tablespoons sliced green onions

For the Salmon Filling

  • 250 g (8–9 oz) salmon
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar
  • 1 teaspoon fresh lime juice
  • 1 teaspoon grated fresh ginger
  • 1 tablespoon finely sliced green onion

For the Avocado

  • 1 ripe avocado
  • 1 teaspoon fresh lime juice
  • Small pinch of salt

For the Spicy Mayo

  • ¼ cup mayonnaise
  • 1–2 tablespoons sriracha
  • 1 teaspoon lime juice
  • ½ teaspoon sesame oil

Instructions
 

Prepare the Sushi Rice

  • Rinse the sushi rice under cold water several times until the water runs mostly clear.
    Combine the rice and water in a rice cooker or saucepan and cook according to the package directions.
    Once cooked, allow the rice to rest for approximately 10 minutes.
    Transfer the rice to a wide bowl.
    Mix together the rice vinegar, sugar, and salt until the sugar dissolves.
    Gently fold the seasoning into the warm rice using a spatula.
    Allow the rice to cool to room temperature before assembling the cucumber boats.

Prepare the Salmon

  • For a cooked salmon version, preheat the oven to 400°F (200°C).
    Place the salmon on a lined baking sheet and bake for approximately 10–14 minutes, depending on thickness, until cooked through.
    Allow it to cool slightly, then flake it into small pieces.
    For a raw version, only use salmon specifically sold and handled for raw consumption and keep it properly refrigerated.

Season the Salmon

  • Place the cooked or appropriately prepared salmon in a bowl.
    Add soy sauce, sesame oil, rice vinegar, lime juice, ginger, and green onion.
    Gently mix until evenly coated.
    Avoid overmixing the salmon.

Prepare the Cucumbers

  • Wash and dry the cucumbers thoroughly.
    Cut each cucumber lengthwise in half.
    Using a small spoon, carefully scoop out the center, leaving approximately ¼ inch (6 mm) of cucumber flesh around the edges.
    Do not scoop all the way through the bottom.
    The cucumber should resemble a small boat capable of holding the filling.

Prepare the Avocado

  • Cut the avocado in half and remove the pit.
    Scoop the flesh into a bowl.
    Add lime juice and a small pinch of salt.
    Mash lightly while keeping some small pieces intact for texture.
    Alternatively, dice the avocado into small cubes.

Prepare the Spicy Mayo

  • Combine mayonnaise, sriracha, lime juice, and sesame oil in a small bowl.
    Stir until smooth.
    Adjust the sriracha according to your preferred spice level.
    Transfer the sauce to a squeeze bottle or piping bag for easier drizzling.

Fill the Cucumber Boats

  • Place the cucumber halves on a serving platter.
    Add a layer of seasoned sushi rice inside each cucumber boat.
    Top with seasoned salmon.
    Add small spoonfuls of avocado over the salmon.
    Do not overfill the cucumbers because they should remain easy to pick up and eat.

Add the Garnishes

  • Sprinkle the boats with toasted sesame seeds and sliced green onions.
    Add furikake, nori strips, pickled ginger, jalapeño, or microgreens if desired.

Serve

  • Serve the Salmon-Avocado Cucumber Sushi Boats immediately.
    For extra brightness, serve with lime wedges or a small bowl of ponzu sauce.
