For the Shortbread Crust:
- 1 cup unsalted butter, softened
- ½ cup granulated sugar
- 2 cups all-purpose flour
- ¼ tsp salt
For the Caramel Filling:
- 1 cup unsalted butter
- 1 cup brown sugar, packed
- ¼ cup light corn syrup
- 1 can (14 oz) sweetened condensed milk
- ½ tsp vanilla extract
Step 1: Make the Shortbread Crust
Preheat oven to 350°F (175°C) and line a 9x13-inch baking pan with parchment paper.
In a mixing bowl, cream together butter and sugar until light and fluffy.
Add flour and salt, mixing until a dough forms.
Press the dough evenly into the prepared pan.
Bake for 18-20 minutes or until lightly golden. Set aside to cool.
Step 2: Prepare the Caramel Filling
In a medium saucepan, melt butter over medium heat.
Stir in brown sugar, corn syrup, and condensed milk.
Bring the mixture to a gentle boil, stirring constantly for 5-7 minutes, until thickened.
Remove from heat and stir in vanilla extract.
Step 3: Assemble & Chill
Pour the warm caramel over the cooled shortbread crust, spreading evenly.
Let it sit at room temperature for 15 minutes, then sprinkle with flaky sea salt.
Refrigerate for at least 1 hour before cutting into bars.
