- 2 large ripe tomatoes, seeded and finely diced
- ⅓ cup extra virgin olive oil
- 1 tablespoon fresh lemon juice
- 1 teaspoon lemon zest
- 1 small garlic clove, finely minced
- 1 tablespoon chopped fresh basil
- 1 tablespoon chopped fresh parsley
- 1 tablespoon capers, drained and chopped
- ½ teaspoon sea salt
- ¼ teaspoon freshly ground black pepper
Wash, seed, and finely dice the tomatoes. Place them in a medium mixing bowl.
Add the minced garlic, chopped basil, parsley, chives, and capers.
Pour in the extra virgin olive oil and fresh lemon juice.
