Ingredients
  

  • 1½ lbs potatoes (Yukon Gold or red), cut into chunks
  • 1 lb Italian sausage (smoked or fresh), sliced
  • 3 bell peppers (red, yellow, green), sliced
  • 1 large onion, sliced
  • 3 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried paprika
  • Salt and black pepper, to taste
  • ½ teaspoon red pepper flakes (optional)

Instructions
 

  • Preheat the oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
  • Place the potato chunks in the pan, drizzle with 1½ tablespoons olive oil, season with salt and pepper, and toss to coat.
  • Roast the potatoes for 20 minutes to give them a head start.
  • Remove from oven and add sausage, bell peppers, and onions.
  • Drizzle remaining olive oil over the mixture and sprinkle with garlic powder, oregano, paprika, red pepper flakes, salt, and pepper.
  • Toss everything together and spread evenly.
  • Bake for another 20–25 minutes, stirring once, until potatoes are tender and sausage is browned.
  • Garnish with fresh herbs before serving.
