- 1½ lbs potatoes (Yukon Gold or red), cut into chunks
- 1 lb Italian sausage (smoked or fresh), sliced
- 3 bell peppers (red, yellow, green), sliced
- 1 large onion, sliced
- 3 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 teaspoon dried paprika
- Salt and black pepper, to taste
- ½ teaspoon red pepper flakes (optional)
Preheat the oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
Place the potato chunks in the pan, drizzle with 1½ tablespoons olive oil, season with salt and pepper, and toss to coat.
