  • 1½ pounds smoked or Italian sausage, sliced into 2-inch pieces
  • 2 pounds baby potatoes, halved
  • 2 large bell peppers (red, yellow, or green), sliced

  • 1 teaspoon Italian seasoning
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon crushed red pepper flakes (optional)
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons chopped fresh parsley

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Lightly grease a large baking dish or sheet pan.
  • In a large bowl, combine the potatoes, bell peppers, onions, garlic, olive oil, Italian seasoning, paprika, oregano, thyme, salt, pepper, and red pepper flakes.
  • Toss everything well until the vegetables are evenly coated.
