Ingredients

  • 2 pounds beef chuck, cut into 1½-inch cubes
  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 3 medium carrots, peeled and sliced
  • 3 medium potatoes, peeled and cut into chunks
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour
  • 1½ cups apple cider, preferably unsweetened
  • 3 cups beef broth
  • 1 teaspoon salt, or to taste
  • ½ teaspoon freshly ground black pepper
  • 1 tablespoon apple cider vinegar, optional
  • 1 tablespoon chopped fresh parsley, for garnish

Instructions

  • Pat the beef cubes dry with paper towels. Season them with salt and black pepper. Drying the meat helps it brown properly and develop a deeper flavor.
  • Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the beef in batches, leaving enough space between the pieces. Brown on all sides, then transfer the beef to a plate.
Avoid overcrowding the pot, as too much meat at once can release moisture and prevent proper browning.
  • Reduce the heat to medium. Add the chopped onion, carrots, and celery to the same pot. Cook for approximately 5–7 minutes, stirring occasionally, until the onion softens.
Add the minced garlic and cook for another 30 seconds. Stir in the tomato paste and cook for 1–2 minutes to deepen its flavor.
  • Sprinkle the flour over the vegetables and stir well. Cook for about one minute, making sure the flour coats the vegetables evenly. This step helps thicken the stew as it simmers.
For a gluten-free version, omit the flour and thicken the finished stew with a cornstarch slurry.
  • Slowly pour in the apple cider while scraping the bottom of the pot with a wooden spoon. This releases the browned bits that contribute rich flavor to the broth.
Add the beef broth, Worcestershire sauce, thyme, rosemary, and bay leaf. Stir everything together.
  • Place the browned beef and any accumulated juices back into the pot. Bring the liquid to a gentle boil, then reduce the heat to low.
Cover partially and simmer gently for approximately 1 hour and 15 minutes. Keep the liquid at a gentle simmer rather than a vigorous boil to help the beef become tender.
  • Stir in the potatoes and optional mushrooms. Continue simmering for another 35–50 minutes, or until the beef is fork-tender and the vegetables are cooked through.
If the stew becomes too thick, add a little extra beef broth or water. If it is too thin, remove the lid for the final 10–15 minutes of cooking.
  • Remove the bay leaf. Taste the stew and adjust the salt and pepper as needed. If the apple cider makes the broth taste a little too sweet, add a small amount of apple cider vinegar to balance the flavors.
  • Turn off the heat and let the stew rest for 5 minutes. Sprinkle fresh parsley over the top and serve hot in deep bowls.
Enjoy it with crusty bread, dinner rolls, mashed potatoes, or a simple green salad.

Notes

  1. Choose the right beef: Beef chuck is ideal because it becomes tender during slow cooking.
  2. Brown in batches: Proper browning builds a deeper, richer flavor.
  3. Choose unsweetened cider: It gives the stew a balanced apple flavor without excessive sweetness.
  4. Keep the simmer gentle: Boiling vigorously can make the meat tougher and cause the liquid to evaporate too quickly.
  5. Cut vegetables evenly: Similar-sized pieces cook more consistently.
  6. Add potatoes later: This helps prevent them from becoming overly soft during the long cooking process.
  7. Check the seasoning at the end: Broth and Worcestershire sauce can contribute significant salt.
  8. Allow resting time: A few minutes of resting lets the flavors settle before serving.
