For the Salad
- 8 ounces spaghetti, soba noodles, or rice noodles
- 1 cup shredded carrots
- 1 cucumber, julienned
- 1 red bell pepper, thinly sliced
- 1 cup shelled edamame, cooked
- 3 green onions, sliced
- ¼ cup fresh cilantro, chopped
- 2 tablespoons toasted sesame seeds
For the Sesame Dressing
- 3 tablespoons soy sauce
- 2 tablespoons toasted sesame oil
- 2 tablespoons rice vinegar
- 2 tablespoons creamy peanut butter
- 1 tablespoon honey
- 1 tablespoon fresh lime juice
- 2 cloves garlic, minced
- 1 teaspoon grated fresh ginger
- 1 teaspoon sriracha (optional)
- 1 tablespoon warm water, if needed to thin the dressing

Cook the noodles according to the package instructions until al dente.
Drain the noodles and rinse thoroughly under cold water to stop the cooking process.

If needed, add a tablespoon of warm water to achieve a pourable consistency.
