Ingredients
  

  • 2 cups long-grain rice
  • 4 chicken thighs or breasts
  • 3 cups chicken broth
  • 1 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1 tsp cumin (optional)
  • ½ tsp paprika
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 cup peas or mixed vegetables (optional)
  • 2 tbsp fresh parsley or cilantro (for garnish)

Instructions
 

  • Rinse the rice under cold water until the water runs clear.
  • Heat olive oil in a large pot or Dutch oven over medium heat.
  • Season the chicken with salt, pepper, turmeric, and paprika.
  • Add chicken to the pot and sear for 3–4 minutes per side until lightly browned. Remove and set aside.
  • In the same pot, sauté onions until soft and translucent.
  • Add garlic, cumin, and turmeric, cooking for about 1 minute until fragrant.
  • Pour in the chicken broth and bring to a gentle boil.
  • Place the chicken back on top of the rice.
  • Cover and cook on low heat for 20 minutes.
  • Fluff the rice, garnish with parsley, and drizzle lemon juice before serving.
