For the Salad:
- 3 cups Brussels sprouts, thinly shaved
- 1/3 cup freshly grated Parmesan cheese
- 1 cup garlic croutons
- Freshly ground black pepper to taste
For the Caesar Dressing:
- 1/3 cup mayonnaise
- 1 tablespoon Dijon mustard
- 1 tablespoon lemon juice (freshly squeezed)
- 1 teaspoon Worcestershire sauce
- 1–2 anchovy fillets, finely minced (optional)
- 1 clove garlic, minced
- 2 tablespoons olive oil
- Salt and black pepper to taste
Trim the ends of the Brussels sprouts and remove any damaged outer leaves.
Thinly shave them using a sharp knife, mandoline, or food processor.
In a small bowl, whisk together mayonnaise, Dijon mustard, lemon juice, Worcestershire sauce, anchovies, garlic, olive oil, salt, and pepper.
Place shaved Brussels sprouts in a large bowl.
Pour dressing over the sprouts and toss well to coat evenly.
Let the salad rest for 10–15 minutes to soften slightly.
Add Parmesan cheese and croutons just before serving.
