For the Chicken
- 4 boneless, skinless chicken thighs or breasts
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano

- Salt and black pepper to taste
For the Chickpeas and Vegetables
- 1 can (15 ounces) chickpeas, drained and rinsed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 2 tablespoons olive oil
- ½ teaspoon paprika
- ½ teaspoon cumin
- Salt and pepper to taste
For Garnish
- Fresh parsley, chopped
- Lemon wedges
- Crumbled feta cheese (optional)
Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.
Pat chicken dry and place in a large bowl.
Toss chicken with olive oil, paprika, garlic powder, oregano, cumin, salt, and pepper.
In a separate bowl, combine chickpeas, bell peppers, onion, olive oil, paprika, cumin, salt, and pepper.
Spread the chickpea and vegetable mixture evenly on the sheet pan.
Arrange the seasoned chicken pieces among the vegetables.
Roast for 30–35 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
For extra crispy chickpeas, broil for 2–3 minutes at the end of cooking.
Remove from the oven and allow to rest for 5 minutes.
