Ingredients
  

For the Chicken

  • 4 boneless, skinless chicken thighs or breasts
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • ½ teaspoon cumin
  • Salt and black pepper to taste

For the Chickpeas and Vegetables

  • 1 can (15 ounces) chickpeas, drained and rinsed
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 2 tablespoons olive oil
  • ½ teaspoon paprika
  • ½ teaspoon cumin
  • Salt and pepper to taste

For Garnish

  • Fresh parsley, chopped
  • Lemon wedges
  • Crumbled feta cheese (optional)

Instructions
 

  • Preheat oven to 425°F (220°C). Line a large sheet pan with parchment paper.
  • Pat chicken dry and place in a large bowl.
  • Toss chicken with olive oil, paprika, garlic powder, oregano, cumin, salt, and pepper.
  • In a separate bowl, combine chickpeas, bell peppers, onion, olive oil, paprika, cumin, salt, and pepper.
  • Spread the chickpea and vegetable mixture evenly on the sheet pan.
  • Arrange the seasoned chicken pieces among the vegetables.
  • Roast for 30–35 minutes, or until chicken reaches an internal temperature of 165°F (74°C).
  • For extra crispy chickpeas, broil for 2–3 minutes at the end of cooking.
  • Remove from the oven and allow to rest for 5 minutes.
  • Garnish with fresh parsley, lemon wedges, and feta cheese before serving.
