Ingredients
  

  • 500g chicken thighs or breast (cut into chunks)
  • 2 cups broccoli florets
  • 1 red bell pepper (sliced)
  • 1 zucchini (sliced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder

For Hot Honey Sauce:

  • ¼ cup honey
  • 1 teaspoon chili flakes (adjust to taste)
  • 1 tablespoon hot sauce
  • 2 cloves garlic (minced)
  • 1 tablespoon butter

Instructions
 

  • Start by preheating your oven to 200°C (400°F). Line a sheet pan with parchment paper for easy cleanup. Place the chicken and vegetables on the pan, drizzle with olive oil, and season with salt, pepper, paprika, and garlic powder. Toss everything well so it’s evenly coated.
  • Spread the mixture in a single layer and roast for about 25–30 minutes, flipping halfway through. While the chicken is cooking, prepare the hot honey sauce by heating butter in a small pan. Add garlic and sauté briefly until fragrant, then stir in honey, chili flakes, and hot sauce. Let it simmer for a minute until slightly thickened.
  • Once the chicken and veggies are roasted and slightly crispy, remove them from the oven and drizzle the hot honey sauce over everything. Toss gently to coat. Serve hot over rice, quinoa, or your favorite base.
