- 6–8 large flour tortillas
- 2 cups cooked shredded chicken
- 1 cup black beans, drained
- 1 cup shredded cheddar or Mexican cheese blend
- ½ cup bell peppers, diced
- ½ cup onions, diced
- ½ cup salsa
- 2 tbsp olive oil or melted butter
Preheat oven to 425°F (220°C).
Grease a large sheet pan and line with tortillas, overlapping so they cover the bottom and hang over the edges.
Spread a filling mixture of cooked chicken, beans, veggies, salsa, and cheese evenly on top.
Fold overhanging tortillas back toward the centre to enclose filling. Top with another tortilla layer.
Brush with oil or melted butter for a golden finish.
Bake for 18–20 minutes until crispy and golden brown.
Let cool slightly, cut into squares, and serve with sour cream, guacamole, or salsa.
