Sheet Pan Quesadillas are a family-friendly recipe that takes the classic quesadilla and transforms it into a baked, crowd-pleasing dish. With gooey cheese, flavourful fillings, and a crispy tortilla crust, this recipe is perfect for parties, busy weeknights, or game-day gatherings.

Ingredients
  

  • 6–8 large flour tortillas
  • 2 cups cooked shredded chicken
  • 1 cup black beans, drained
  • 1 cup shredded cheddar or Mexican cheese blend
  • ½ cup bell peppers, diced
  • ½ cup onions, diced
  • ½ cup salsa
  • 2 tbsp olive oil or melted butter

Instructions
 

  • Preheat oven to 425°F (220°C).
  • Grease a large sheet pan and line with tortillas, overlapping so they cover the bottom and hang over the edges.
  • Spread a filling mixture of cooked chicken, beans, veggies, salsa, and cheese evenly on top.
  • Fold overhanging tortillas back toward the centre to enclose filling. Top with another tortilla layer.
  • Brush with oil or melted butter for a golden finish.
  • Bake for 18–20 minutes until crispy and golden brown.
  • Let cool slightly, cut into squares, and serve with sour cream, guacamole, or salsa.

  • Use rotisserie chicken for a quick option.
  • Swap fillings with ground beef, steak, or roasted veggies.
  • Don’t overload the filling; it helps quesadillas bake evenly.
  • Serve with fresh toppings like jalapeños, cilantro, or lime wedges.
