For the Chicken
- 750 g boneless, skinless chicken thighs
- ½ teaspoon salt
- ½ teaspoon black pepper
- ½ teaspoon turmeric powder
- 1 tablespoon lemon juice
- 1 tablespoon vegetable oil
For the Curry
- 2 tablespoons vegetable oil
- 1 large onion, finely chopped
- 5 garlic cloves, minced
- 1 teaspoon ground coriander
- ½ teaspoon ground cumin
- ½ teaspoon turmeric powder
- ¼ teaspoon chili powder, optional
- 1 tablespoon tomato paste
- ½ cup dry sherry
- 400 ml full-fat coconut milk
- ½ cup chicken stock
- 1 cinnamon stick
- 2 cardamom pods, lightly crushed
- 1 bay leaf
- 1 tablespoon brown sugar
- 1 tablespoon lemon juice
- Salt, to taste

Prepare the Chicken
Cut the chicken thighs into evenly sized pieces.Place them in a bowl and add salt, black pepper, turmeric, and lemon juice.Mix thoroughly.Allow the chicken to marinate for approximately 20 minutes while you prepare the remaining ingredients.
Brown the Chicken
Heat 1 tablespoon of oil in a large heavy-bottomed skillet or Dutch oven over medium-high heat.Add the chicken pieces in a single layer.Cook for approximately 3–4 minutes per side, until lightly browned.The chicken does not need to be completely cooked at this stage.Transfer it to a plate.
Cook the Aromatics
Add the remaining oil to the same pan.Add the chopped onion.Cook for approximately 5–7 minutes, stirring occasionally, until softened and lightly golden.Add the garlic and ginger.Cook for another 1–2 minutes.
Add the Spices
Reduce the heat to medium-low.Add curry powder, coriander, cumin, turmeric, and optional chili powder.Stir continuously for approximately 30–60 seconds.Be careful not to burn the spices.
Add Tomato Paste
Stir in the tomato paste.Cook for approximately 1 minute.The tomato paste should become slightly darker and fragrant.
Add Coconut Milk
Pour in the coconut milk and chicken stock.Stir thoroughly.Add the cinnamon stick, cardamom pods, and bay leaf.
Return the Chicken
Place the browned chicken back into the sauce.Stir gently so that every piece becomes coated.Bring the curry to a gentle simmer.
Simmer
Reduce the heat to low.Cover partially and simmer for approximately 25–30 minutes, stirring occasionally.The chicken should become tender and fully cooked.
Add Sweetness and Acidity
Stir in the brown sugar and lemon juice.Taste the sauce.Adjust the seasoning with additional salt, lemon juice, or curry powder as desired.
Reduce the Sauce
Remove the lid.Simmer uncovered for approximately 5–10 minutes if the sauce needs to become thicker.The finished curry should be creamy and thick enough to coat the chicken.
Finish
Remove the cinnamon stick, cardamom pods, and bay leaf.Allow the curry to rest for approximately 5 minutes before serving.Garnish with fresh cilantro, sliced red chili, and optional toasted cashews.Serve with lemon wedges.
